Easy Oatmeal-Peanut Butter Cookies

Although these cookies aren’t quite “dip in milk” cookies, kids can still prepare them and they turn out fantastic! They are always a hit, and it seems like I can never produce enough. No oven is required!

Ingredients

  1. 2 cups white sugar
  2. ½ cup unsalted butter
  3. ½ cup milk
  4. 3 tablespoons cocoa powder
  5. 2 cups rolled oats
  6. ½ cup peanut butter
  7. 1 tablespoon vanilla extract

Instructions

  1. Stir sugar, butter, milk, and cocoa powder together in a saucepan over medium heat; bring to a boil. Boil for 1 to 2 minutes; err on the side of longer because if it doesn’t boil enough, it won’t set. Remove from the heat.
  2. Immediately stir in oats, peanut putter, and vanilla. Stir until completely mixed. Spoon onto waxed paper and let sit until hard, 10 to 15 minutes.

I cut the recipe in half and got 14 cookies. I left out the cocoa powder, personal preference. They were quick and easy to make but I found them a bit too sweet. Could be due to the fact that I did not add the coca powder. Thanks for sharing your recipe.
