Pears cooked in wine

Ingredients:

  • 4 firm pears, such as Bosc or Anjou
  • 1 cup dry red wine
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 cinnamon stick
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions:

  1. Peel, halve, and core the pears.
  2. In a medium saucepan, combine the wine, sugar, water, cinnamon stick, ginger, and nutmeg. Bring to a boil, then reduce heat to low and simmer for 5 minutes.
  3. Add the pears to the saucepan and cook for 20-25 minutes, or until the pears are tender when pierced with a fork.
  4. Remove the pears from the saucepan and set aside. Reduce the poaching liquid over medium heat until it is syrupy.
  5. Serve the pears warm or cold, drizzled with the poaching liquid.

Tips:

  • You can use any type of dry red wine that you like. A Zinfandel, Shiraz, or Merlot would all work well.
  • If you don’t have ground ginger or nutmeg, you can use whole spices. Just add them to the saucepan with the wine and water and remove them before serving.
  • You can serve the pears with a dollop of whipped cream or vanilla ice cream.

Enjoy!
