Ingredients
- 1/2 cup olive oil
- 1/2 cup diced onions
- 2 tablespoons chopped garlic
- 2 tablespoons ground coriander
- 1 tablespoon ground cumin
- 2 (16-ounce) cans drained, rinsed black beans
- 1 cup water
- 1/4 cup chopped cilantro with stems
- Salt and pepper
Instructions
- Heat skillet. Add olive oil, onion, garlic, coriander, cumin, and saute until you start to smell the spices. Add beans and 1 cup of water. Let simmer for 15 minutes then start pressing the beans with a potato masher. Add cilantro, salt and pepper and allow to simmer for another 20 minutes. Add water when needed until you reach desired consistency.

It is about the same as other recipes I’ve tried, I guess I was just looking for a little somthing more to it. Reading the recipe I thought that’s the way it would go. But it was good
