Creamed Kale

Ingredients

  1. 2 pounds kale, center stalks removed
  2. 4 tablespoons unsalted butter
  3. 1 cup heavy cream
  4. 1/8 teaspoon ground nutmeg
  5. Salt and freshly ground pepper

Instructions

  1. Blanch the kale in lightly salted water until tender, rinse in ice water, drain and cut into 1/2-inch ribbons. In a large saute pan over medium heat, melt the butter and add the kale, cream and nutmeg. Reduce the heat to low and cook for 5 minutes, or until the cream has reduced and thickened. Season with salt and pepper to taste.

I used 2 one pound bag and was enough for dinner party with 12 guests. Just like some suggested, I added garlic, onion, red pepper flakes and discovered it tastes even better with a spoonful of turkey gravy on plate. I made more for lunch and tastes fine after a few days in fridge.

I added garlic, onion and some red pepper flakes as some others suggested. It made it tastier to me. Also used light cream which didn’t thicken like heavy cream but was very good and saved calories. Will make this again!

This was awesome – i didn’t change a thing in the recipe. When it was cooked, I put it through my food processor just enough to chop it more finely. This made the consistency closer to the dish I was hoping to replicate from a restaurant on Christmas day. I will make this easy side dish frequently!
