Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 3 tablespoons onion, minced
- 2 cups mixed mushrooms, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt
- Pepper
- Balsamic or red wine vinegar
- 1 baguette
Instructions
- In skillet heat olive oil. Cook garlic and onion until golden. Add mushrooms, thyme, basil, salt and pepper. Add a splash of vinegar. Cook until mushrooms begin to wilt. Cut baguette into 1/2 ” slices and toast. Top baguette with mushrooms and serve.

I altered the recipe a bit and cooled the mixture and added 1/2 cup of italian mix cheese. Put mixture on top of bread before toasting. Served with balsalmic vinigar on the side. Mushroom mixture could use a bit more kick but not exactly sure what that might be.
I thought this recipe was just ok. I thought the thyme was overpowering the flavor of the mushrooms. If I was to make again I would likely cut the thyme in half but I’m not sure I would even come back to this recipe.
I made this as an appetizer for a dinner party and it was a hit…I did a bruschetta trio and this one was by far the favorite..very easy and delish!
