Vinegar and Salt Grilled Potato “Chips”

Ingredients

  1. 4 medium Yukon gold potatoes, scrubbed
  2. Canola oil
  3. Salt
  4. Freshly ground black pepper
  5. Malt vinegar
  6. Kosher salt or Fleur de Sel

Instructions

  1. Heat the grill to medium.
  2. Place potatoes in a pot of cold water, add 1 tablespoon of salt and cook until potatoes are tender, but still firm, about 10 minutes. Drain, let cool and slice into 1/4-inch thick slices.
  3. Brush the potatoes on both sides with the oil and season with salt and pepper. Grill the slices until golden brown on both sides and just cooked through, about 10 minutes.
  4. Remove the slices to a platter in an even layer and immediately drizzle with the vinegar and season with salt.

This is the kind of recipe we all live for–a really great, simple recipe. This is very easy to prepare, and can be altered with different seasonings to pare with any dish. As is, it goes great with fish–especially with the malt vinegar. Definitely use the Fleur de Sel–a whole new level of flavor there.
