I’ll never prepare tacos once more! This dish, which is a variation on walking tacos, makes taco assembly less stressful. Delicious and quite simple. Serve with sour cream and little tortilla chips.

Ingredients
- cooking spray
- 1 pound ground beef
- ¾ cup water
- 1 (1.25 ounce) package taco seasoning mix
- 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
- 2 tablespoons taco sauce, or to taste
- 1 (16 ounce) can refried beans, warmed
- 1 (8 ounce) container sour cream
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray an 8- or 9-inch square pan with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in water and taco seasoning mix and bring to a boil. Reduce heat and simmer, stirring occasionally, for 5 minutes.
- Transfer ground beef to the prepared pan. Layer with diced tomatoes and green chiles, taco sauce, warm refried beans, sour cream, and Mexican cheese.
- Cook, uncovered, in the preheated oven for 20 minutes. Let sit for 10 minutes before serving.

Very simple and delicious. I also make this in the crockpot on days when it’s too hot to bake. I serve it on tortilla chips, along with other toppings as desired.
