Ingredients

  1. 3 tablespoons butter
  2. 3 eggs, separated
  3. 2 cups cheese curd
  4. 2 ounces semolina
  5. 1 teaspoon chopped lavender
  6. 1 tablespoon cream
  7. 2 tablespoons flour

Instructions

  1. Cream the butter and beat in the yolks 1 at a time. Add the curd, semolina, lavender, cream, flour, and lavender, and let rest for 1 hour, making sure to cover.
  2. Bring a medium pot of salted water to boil.
  3. Whisk the egg whites until they are stiff and fold into the curd mixture.
  4. Using a tablespoon, drop the batter into the water. Boil for 8 minutes.
