Ingredients

  1. One 12-inch round focaccia loaf
  2. 1/3 cup mayonnaise
  3. 1 clove garlic, crushed
  4. 1 tablespoon juice of marinated artichokes
  5. 1/2 pound thinly sliced smoked turkey
  6. 2 Roasted Red Peppers, recipe follows
  7. 1/4 pound provolone, thinly sliced
  8. 1/2 red onion, thinly sliced
  9. 2 tomatoes, thinly sliced
  10. 1 cup shredded fresh spinach
  11. Balsamic vinaigrette
  12. 2 red bell peppers
  13. Olive oil
  14. Kosher salt

Instructions

  1. Slice the focaccia bread in half horizontally. Mix together mayonnaise, garlic, and artichoke juice. Spread this mixture on the bread. Layer the remaining ingredients on half of the bread. Sprinkle with balsamic vinaigrette. Top with second piece of bread. Wrap in plastic wrap and then foil. Refrigerate at least 2 hours or overnight. Slice into wedges and serve. Other cold cuts and cheeses can be used.
  2. Cut peppers in half and clean out seeds. Brush with olive oil and sprinkle with kosher salt. Grill on low-medium heat for 20 minutes. Peel off blackened skin.

Everyone from the pickiest teen to the grumpiest grandparent loved this sandwich. Followed the recipe pretty closely, substituting arugula for the spinach. What a winner!! It’s officially on our make-it-again list.

Both men & women will love this sandwich. I used a couple different good quality breads for variety. One with ham…the other with turkey. I didn’t bother with the artichoke juice – but did add dried basil & oregano in with the mayo. Great picnic sandwich.
