Strawberry Vegan Nice Cream

My family ALWAYS cooks this recipe at Christmas, along with another one. Holiday-themed chocolate spritz cookies will quickly and easily bring diversity to any cookie platter.

Ingredients

  1. ¼ cup raw cashews
  2. 1 ripe banana
  3. 1 cup frozen strawberries
  4. 1 cup ice cubes
  5. 3 ounces extra-firm tofu, pressed to remove water
  6. 2 Medjool dates, pitted
  7. 1 teaspoon mint extract
  8. 1 teaspoon soy milk, or more as needed

Instructions

  1. Place cashews in a bowl and cover with water. Soak for 1 to 3 hours. Drain.
  2. Combine soaked cashews, banana, strawberries, ice cubes, tofu, dates, mint extract, and 1 teaspoon soy milk in a blender. Process until smooth. Add an additional teaspoon of soy milk only if needed, in order to keep the mixture as thick as possible.
  3. Pour into a bowl to serve.
  4. Use any plant-based milk you like.

I didn’t think this would be vegan and it wass can you belive that they don’t even tell you that this is vegan and guess what i was playing mario kart with my best of da best friends better than yurs and i didn’t even make this recipe it was so bad and can you belive that koppa troopa took first place because i got hit with that blue turttlle shwell im sad now 🙁
