These cakes were baked for years by my mother and grandma. Despite not having eggs, they are moist. The key component is applesauce. Years ago, I sold these at bake sales, and we had many repeat customers who came back only to acquire one.

Ingredients
- ½ cup yogurt
- ½ cup pineapple tidbits in pineapple juice, undrained
- ½ cup raisins
- ½ cup coconut
- 2 tablespoons honey, or to taste
- 4 cups spiral-sliced carrots
Instructions
- Stir yogurt, pineapple, raisins, coconut, and honey together in a bowl; add carrots. Stir until ingredients are thoroughly combined. Refrigerate until chilled, about 30 minutes. Stir again before serving.
- Use a spiralizer or vegetable peeler to cut carrots into noodle shapes.

Yes. Modified by adding silvered almonds, & using Stevie instead of honey to keep sugars lower. Wonderful
