Spaghetti with Oil and Garlic (Aglio e Olio)

Ingredients

  1. Kosher salt
  2. 1 pound spaghetti
  3. 3 cloves garlic, minced
  4. 1/2 cup extra-virgin olive oil
  5. Pinch red pepper flakes
  6. 2 tablespoons chopped flat-leaf parsley
  7. 1/2 lemon, zested, optional
  8. Freshly grated Parmigiano-Reggiano, optional

Instructions

  1. Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.
  2. While the pasta cooks, combine the garlic, olive oil, 1 teaspoon salt and the red pepper flakes in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.
  3. Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well. Add the parsley and lemon zest (if using). Adjust seasoning, to taste. Transfer to a large serving bowl or divide amongst 4 to 6 dishes. Serve topped with grated cheese, if desired.

This was really great, quick, and easy! I cooked my noodles in chicken broth, & I added cooked bacon in when I was cooking the noodles, etc. in portions with the spinach. It was delicious and my family LOVED it.

The flavors are very nice. We enjoyed the kick from the red pepper flakes. We thought there was way too much oil, but not enough garlic. If you’re a fan of garlic, I’d start with 4 cloves instead of 3. For the oil, it’s way too much. I’d start with 1/4 cup first. We added a lot of Parmesan because…. Well it’s cheese. All in all we enjoyed this and will make again. It’s an easy recipe and will be easy to make after a long day. Enjoy!

Made this tonight. It was surprisingly good. I added some of my own herbs and some chicken stock And grape tomatoes. It was very good. Will definitely make it again.

Ok not great needs a little more, add some cherry tomatoes or some diced tomatoes and cook some butter in with the leftover pasta water and noodles in sauce pan

I’m not sure how this recipe popped up in my box today, but I watched the video and tried it tonight for dinner. Delicious, simple, big hit in the household. We cook a lot of Italian food in our house and so we had all the ingredients on hand anid not deviated from the recipe one bit. Love this!
