Roasted Acorn Squash with Sriracha Butter

Compared to the conventional Italian sausage sandwich, this is a healthier option. But you’ll still experience the full bratwurst flavor and all your other favorite flavors.

Ingredients

  1. 1 (2 pound) acorn squash
  2. ¼ cup butter
  3. 2 tablespoons Sriracha sauce
  4. 2 teaspoons honey
  5. 1 tablespoon olive oil
  6. salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Cut the squash in half vertically, and scoop out the seeds in the middle. Cut each half into 4 wedges and place wedges on the prepared baking sheet.
  3. Melt butter in a small saucepan over medium-low heat. Whisk in Sriracha sauce and honey; keep warm.
  4. Brush squash with olive oil and sprinkle with salt and pepper. Place wedges on their side and roast for 20 minutes; flip wedges over and roast until squash is soft and edges are caramelized, 15 to 20 minutes.
  5. Place wedges on a serving platter and drizzle with Sriracha butter.

What a surprise! Savory acorn squash. The squash has a creamy texture that absorbs the sweet and spicy flavors! Now I have a choice between making acorn squash with brown sugar or a little spicy pepper sauce!

I love acorn squash and this is an interesting, alternative way to eat it (I usually bake it with butter and brown sugar). It has more of a savory flavor with a spicy kick.
