I created this recipe by combining several others—my mother’s pie crust, an old port wine sauce recipe, and, of all things, fajita filling—in an attempt to imitate a dish from Williamsburg’s King’s Arms Tavern. Excellent as the main course at Christmas or Thanksgiving.

Ingredients
- 1 cup quinoa
- 3 cups water
- 1 pinch salt
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- ½ cup corn kernels
- ½ teaspoon cumin
- 1 teaspoon dried oregano
- salt and pepper to taste
- 2 green onions, chopped
Instructions
- Bring the quinoa, water, and 1 pinch of salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, about 20 minutes. Once done, drain a mesh strainer, and set aside.
- Meanwhile, heat the olive oil in a saucepan over medium heat. Stir in the garlic, and cook until the garlic softens and the aroma mellows, about 2 minutes. Add the red pepper, and corn; continue cooking until the pepper softens, about 5 minutes. Season with cumin, oregano, salt, and pepper, and cook for 1 minute more, then stir in the cooked quinoa and green onions. Serve hot or cold.

I made the quinoa in a rice cooker and then added the sauteed vegetables. It was easy to make and added flavor to plain quinoa.
I love quinoa and this is my new favorite way to make it. I recommend 2 cups of water per cup of quinoa vice 3 as written. Consider garnishing with fresh cilantro if you have some. Great recipe!

I messed up and used vegetable JUICE (V8) instead of vegetable BROTH! LOL! Still was delicious! Definitely will make it again!
I made the dish with red quinoa. It is a good flavor and consistency, plus was simple to make.

Sautéed all vegetables together, then added quinoa & only 2 cups of vegetable broth. Brought to boil then reduced heat to cook for about 20 minutes. Used stated ingredients except onions. Will make again using different vegetables, reminded me of a pilaf.
I think I might have run low on garlic. It didn’t have much flavor but that was probably user error. I can never seem to make quinoa taste right!

It was the first time I had quinoa and this recipe is so delisious. My whole family loves it! It was so good that I have made it two days in a row 🙂 And it is very easy to make!! 5 star for sure and has been added to my saved list.

This is fantastic! My entire family enjoys this as a side or main dish. This is not something that happens often. I use vegetable broth or chicken broth instead of water to give a bit more flavor, but that’s just personal preference. May be just as tasty without that step.
This was my first time cooking Quinoa. My family found it fairly bland. But I plan on making it again. So next time I will try cooking it with chicken or other broth to add some flavor, or adding soy sauce. I added lots of extra vegetables to make it a combo dish of grain and lots of vegetables. I added fresh corn cut off the cob, mushrooms, broccoli, and red peppers.
I used 4 cloves crushed garlic, added a diced jalapeño and string beans. The flavouring with the cumin and oregano is perfect.

I loved this recipe, I add cooked chicken and other vegetables to beef it up. I take the leftovers for lunch.
This was my first time ever cooking quinoa and this recipe was a great place to start – very simple and straightforward! I added red onion, which I enjoyed. I’m looking forward to making this recipe again and possibly adding tofu and a few other items. 🙂
