To make these apple pie-cinnamon buns as fantastic as possible, I used three separate recipes.

Ingredients

  1. 4 large potatoes
  2. 1 yellow onion
  3. 1 egg, beaten
  4. 1 teaspoon salt
  5. ground black pepper to taste
  6. 2 tablespoons all-purpose flour, or more as needed
  7. 1 cup vegetable oil for frying, or as needed

Instructions

  1. Finely grate potatoes and onion into a large bowl. Drain off any excess liquid.
  2. Mix in egg, salt, and pepper. Add enough flour to make the mixture thick, about 2 to 4 tablespoons all together.
  3. Preheat the oven to low, about 200 degrees F (95 degrees C).
  4. Heat 1/4 inch oil in the bottom of a heavy skillet over medium-high heat. Drop two or three 1/4-cup mounds of batter into hot oil, and flatten with back of a spatula to make 1/2-inch-thick pancakes. Fry, turning pancakes once, until golden brown.
  5. Transfer pancakes to a plate lined with a paper towel to drain. Keep warm in the oven until serving. Repeat until all potato mixture is used.
  6. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.

I grate medium not fine. If I have a zucchini, I spiralize it and add some to the,potatoes. Adding cornstarch dusting before frying makes a crispy coating. Sour cream or applesauce is a good topping

These were just like my grandmother used to make! My family loved them. The kids ate them with ketchup and my hubby and I had them with sour cream. They definitely should be made with russet potatoes because they are nice and starchy. And I disagree with the commenters who said to grate the potatoes to mush – they should be stringy like shredded hash browns in a restaurant. The little bits that escape the pancake shape around the edges and get extra crispy are the best part!

One way to make sure they don’t get super greasy is to make sure the oil is at full temperature and the mixture is cold. This creates a thermal barrier that helps keep the oil from seeping in because the boiling water is cooking out.

Great recipe and I appreciated the visual tip on getting water our of the potatoes and onions. I added some Cheddar cheese and pepperoncini before frying and we loved it.

These were great! I followed the recipe exactly the first time. The second time instead of flour I used Instant potato flakes. It was fine too.
