Microwave Delicata Squash

Because you don’t need to peel delicata squash, cooking it in the microwave takes less than 10 minutes and requires very little preparation. It can be eaten as a side dish or added to a salad or grain bowl. To go with whatever you are serving it with, change the dressing.

Ingredients

  1. 1 delicata squash, halved lengthwise and seeded
  2. ½ cup vegetable broth
  3. 1 pinch salt to taste
  4. 1 lime, juiced
  5. 1 teaspoon white sugar
  6. 1 tablespoon Sriracha sauce
  7. ½ teaspoon sesame oil
  8. ¼ teaspoon fish sauce

Instructions

  1. Place delicata squash halves, cut-sides down, in a microwave-safe bowl. Pour in vegetable broth, season with salt, and cover with a lid.
  2. Cook in the microwave until squash is easily pierced with a knife, about 8 minutes. Uncover carefully and drain broth. Flip squash and let cool for 5 minutes before cutting into smaller pieces.
  3. Whisk lime juice, sugar, Sriracha sauce, sesame oil, and fish sauce in a small bowl until sugar is dissolved. Pour dressing over squash.
