Ingredients
- 6 slices bacon, or to taste
- cooking spray
- 1 cup sour cream
- ½ cup butter
- 1 pinch salt-free seasoning blend, or to taste
- 8 frozen hash browns, thawed, or more to taste
- ¾ cup shredded Cheddar cheese, or to taste
- 1 tablespoon dried chives, or more to taste
- ground black pepper to taste
Instructions
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and break into small pieces.
- Preheat the oven to 400 degrees F (200 degrees C). Spray a 9×4-inch loaf pan with cooking spray.
- Mix sour cream, butter, and seasoning blend together in a bowl. Layer 2 1/2 hash browns in the prepared dish. Spread 1/3 of the sour cream mixture over hash browns. Sprinkle 1/4 cup Cheddar cheese and 1/3 of the bacon on top. Repeat layers twice more. Sprinkle chives and pepper over casserole. Cover with aluminum foil.
- Bake in the preheated oven until cheese is golden brown and casserole is heated through, about 1 hour.
- You can thaw an entire package of hash browns (18 to 20 hash browns) and double the other ingredients to make a 9×13-inch casserole.

This was delicious however, way too much butter! I recommend half the amount or it will be swimming in it. Otherwise, yum!!
This recipe works well! I made some changes that helped keep it from being too greasy. I buttered my pan instead of cooking spray, and left the butter out of the recipe. I used shredded hash browns, thawed and drained. I used bacon pieces already cooked and cut in a bag. I mixed the shredded hash browns with the bacon pieces, and salt and pepper to taste. I followed the rest of the recipe as to layering the ingredients: My husband and I loved it! Easy and cheap to make, we will make it again.
Made as written and this turned out pretty good except that it was swimming in grease. I recommend reducing the butter by quite a bit. I’m still giving this 4 stars for the creativity in using hash brown patties. Make sure they are completely thawed to reduce excess moisture.
