Instant Pot Orange-Ginger Carrots

Pork tenderloin goes great with this fast side dish. Orange flavor dominates, with a very slight ginger undertone.

Ingredients

  1. 3 tablespoons butter
  2. 3 tablespoons orange juice
  3. 3 tablespoons honey
  4. ¼ teaspoon ground ginger
  5. ¼ teaspoon salt, or to taste
  6. 12 ounces thin baby carrots

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Add butter and allow to melt. Mix orange juice, honey, ginger, and salt into the butter. Add carrots and stir to coat.
  2. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 6 minutes. Allow 10 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Select Saute function; cook over high heat to thicken the liquid, 3 to 5 minutes.

I made this according to the recipe except I had a 16 oz bag of baby carrots that I used. It was tasty and everyone liked them! I might drop the time to 5 minutes next time as I like my carrots on the firm side.

4.5.19 I didn’t have baby carrots, so I just cut my whole carrots into sticks. Although I’m not convinced that you save any time using the Instant Pot®, the sauce was quite flavorful. My carrots were overcooked at 6 minutes even with releasing the pressure instantly (not waiting 5 minutes), but that could have something to do with not using baby carrots. If I were to use the Instant Pot® again, I’d probably try 3-4 minutes. Very tasty, but honestly, I’ll probably just steam the carrots in the microwave in the future which only takes about 2-3 minutes, but most definitely will use the orange-ginger sauce in this recipe.
