Ingredients

  1. 4 (15.5 ounce) cans mashed sweet potatoes
  2. 1 cup white sugar
  3. ½ cup butter, softened
  4. ½ cup milk
  5. 2 eggs, beaten
  6. 1 tablespoon ground cinnamon
  7. 1 teaspoon vanilla extract
  8. 1 ½ cups brown sugar
  9. 1 cup chopped pecans
  10. 1 cup flaked coconut
  11. ½ cup butter, softened

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Stir mashed sweet potatoes, white sugar, 1/2 cup butter, milk, eggs, cinnamon, and vanilla together in a large bowl until smooth; transfer to a casserole dish.
  3. Mix brown sugar, pecans, coconut, and 1/2 cup butter in a bowl; spread atop the filling.
  4. Bake casserole in preheated oven until topping is golden brown, about 30 minutes.

I am giving this 2 stars because at the VERY least it contains some semblance of vegetable. However, as a dessert it would likely be given a 4 star rating minus about half of the sugar. Let’s be clear here, this is NOT a casserole but could be classified as a type of baked pudding dessert. Enjoy!

This is way too sweet. To correct use no sugar in sweet potato mixture. It just isn’t needed.

Used 1/2 brown sugar instead of all white sugar Yummy – delicious!!!

Although highly rated by others, I cut the sugar by a third and still found it so sweet as to be inedible. The flavour of the sweet potatoes is completely overpowered. A half cup of brown sugar in the topping would be more than sufficient and omit the white sugar added to the sweet potato mixture.

I always make my own changes to a recipe like, adding a little more cinnamon and a dash of nutmeg. I also like a thick topping, but the rest is the same.
