Ingredients

  1. 6 tablespoons butter
  2. 1 cup chopped pecans
  3. 1 (7 ounce) package shredded coconut
  4. 1 (14 ounce) can sweetened condensed milk
  5. 1 (8 ounce) package cream cheese, softened
  6. 1 (16 ounce) container frozen whipped topping, thawed
  7. 2 (9 inch) prepared graham cracker crusts
  8. 1 (12 ounce) jar caramel ice cream topping

Instructions

  1. Melt butter in a medium skillet over medium heat. Stir in pecans and coconut until coated, then sauté until both are lightly toasted, about 5 minutes. Remove from the heat.
  2. Beat condensed milk and cream cheese in a large bowl with an electric mixer until fluffy. Fold in whipped topping.
  3. Spoon 1/4 of the whipped topping mixture into each crust, then top each with 1/4 of the caramel topping. Repeat layers once more, using remaining whipped topping mixture and caramel topping. Sprinkle coconut and pecan mixture over top. Freeze for 8 hours to overnight.

I too have been making this for a long time and everyone loves it. My version makes 2 and I use the store bought chocolate crusts. I put a cream layer in each one, drizzle with caramel, then another cream layer and drizzle with caramel, adding the coconut, pecans on top. I then use the plastic lid that comes with the crusts and invert it over the top of the pies crimping the edges, and you can stack on top and store in freezer. Great summer treat!

Delicious! I added a pinch of kosher salt to the pecan/coconut mixture and to the cream cheese mixture because this pie is very sweet. I think next time I would make it in a 9 x 13 inch pan with a homemade graham cracker crust.

I hesitate to leave a review because I made a lot of changes. The base of this dessert is perfect, but I followed another reviewer’s advice and used an Oreo crust and added hot fudge between layers, making it more of a turtle pie. It was loved by everyone who tried it.

This pie was much sweeter than I anticipated but it was still really good and very easy to make. Since it yields 2 pies, I kept the second one in the freezer for a couple of weeks and it was just as good as the fresh one. I will make again.

Added 1 tsp vanilla bean paste to cream cheese/Eagle Brand condensed milk mixture and chocolate chips. Light, very tasteful Summer dessert. Will definitely make again and use my own graham cracker crust recipe.

I am making it the second time how. Halved it for on pie at a time. Changes: Instead of sweetened condensed milk, combined 1/2 cup vanilla protein powder in 7 oz of milk. Deliciously sweet. Made a crust with vanilla wafers (made crumbs, combined with butter). Used lowfat cream cheese and topping and did not add caramel sauce as it was plenty sweet. Used walnuts instead of pecans. This time I am using almonds. I think that this could be varied in a lot of ways and still be wonderful. Husband, who is a chocolate man, won’t let me change a thing. Great company dessert and very easy. Doesn’t requite an oven so it keeps the house cool in the summer. 10!

I did utilize real whipped cream ( yes, it freezes well) in the recipe, more coconuts & pecans toasted a bit longer & spread in the layers before the caramel drizzle. Great recipe!
