Easy Tofu and Watercress Salad

Ingredients

  1. 1 bunch watercress
  2. 1 (12 ounce) package extra-firm tofu, drained and cubed
  3. 1 (8 ounce) package bean sprouts
  4. 1 (8 ounce) container grape tomatoes, halved
  5. 1 (5 ounce) can tuna, drained
  6. ½ cup minced green onion
  7. ⅓ cup shoyu (Japanese soy sauce)
  8. 1 tablespoon olive oil
  9. 1 tablespoon white sugar
  10. 2 teaspoons sesame seeds
  11. ½ teaspoon grated fresh ginger
  12. 1 clove garlic, minced

Instructions

  1. Cut watercress into 1 1/2-inch lengths. Combine with tofu, bean sprouts, grape tomatoes, tuna, and green onion in a large bowl.
  2. Mix shoyu, olive oil, sugar, sesame seeds, ginger, and garlic together in a bowl. Drizzle dressing over salad (a little goes a long way) and toss before serving.
