Ingredients
- 3 tablespoons unsalted butter
- 2/3 cup minced scallions
- 8 large eggs
- 4 ounces cream cheese, cut into bits and softened
- Salt and freshly ground pepper, to taste
- Snipped chives or thinly sliced scallions tops for garnish
Instructions
- In a medium non-stick skillet cook the scallions in the butter over moderate heat, stirring occasionally, until soft. In a bowl whisk together the eggs, cream cheese and salt and pepper. Pour the mixture into the skillet and cook over moderately low heat, stirring, or until cooked. Transfer to a serving plate and sprinkle with the chives or scallions.

the addition of the cream cheese was amazing!! however, i didn’t like the chives and i just didn’t add the scallions because i didn’t have any. overall amazing cream cheese scrambled eggs!
I cut the recipe to two eggs. I didn’t have scallions so I used onions and delish!! I also had some leftover sautéed mushrooms so I heated those up and oh my goodness..the perfect quick breakfast!!
I’ve never made eggs this way using cream cheese. Didn’t even know you could. I came across this recipe actually by accident looking for something else and after reading it I thought, well, let’s give it a try. What a success this way. My husband who is pretty critical of my morning eggs even liked it very much. I followed the recipe cutting it in half for two people but added a few leftover ham cubes as well. It was delicious and I will certainly make it again and again…would be good for company as well.

I have always made scrambled eggs like this as I learned the “creamed cheese secret” from my mother!! I also add the sauteed chopped onions or chopped green onions. Sometimes I add chopped bacon or ham, and sauteed mushrooms also are delicious! This recipe makes the best scrambled eggs in the world!!
