Quick Lotus Seed and Nut Snack

Makhana (lotus seeds), peanuts, and cashew nuts are used to make this quick Indian snack.

Ingredients

  1. 1 tablespoon ghee (clarified butter)
  2. ⅓ cup cashews
  3. ½ cup salted peanuts
  4. 2 cups lotus seeds
  5. salt and freshly ground black pepper

Instructions

  1. Heat ghee in a skillet over medium heat and shallow-fry cashew nuts until fragrant and lightly toasted, 2 to 3 minutes. Remove from skillet and dry on paper towels. Add peanuts and fry in the same skillet until lightly toasted, 2 to 3 minutes. Add lotus seeds and fry over low heat until they are crisp and have absorbed all the ghee, about 3 minutes.
  2. Mix cashews, peanuts, and lotus seeds in a bowl and season with salt and pepper. Store in an airtight jar to stop them from getting soggy.
  3. This snack can be served with evening tea. Children like it as it very crispy and tasty. Makhana or lotus seeds are available in Indian stores. This snack can be stored for a long time and is nutritious for children.
