Slow Cooker Bean and Barley Stew

Ingredients

  1. 8 cups low-sodium chicken or vegetable broth
  2. 1 pound mix of dried beans, such as navy and pinto, rinsed
  3. 2 teaspoons kosher salt
  4. 1/2 teaspoon freshly ground black pepper
  5. 3 stalks celery, diced
  6. 2 carrots, diced
  7. 2 cloves garlic, minced
  8. 1 medium yellow onion, chopped
  9. 1 bay leaf
  10. A few sprigs fresh thyme
  11. 8 ounces dried barley
  12. 8 ounces baby spinach
  13. Toasted crusty bread or baguette, for serving

Instructions

  1. Combine the broth, bean mix, salt, pepper, celery, carrots, garlic, onions, bay leaf, thyme and 2 cups water in a slow cooker. Cover and cook on low for 7 hours. Add the barley and, if the broth looks low, another cup of water. Cover and cook on low an additional 1 hour (8 hours total).
  2. Just before serving, stir in the spinach to wilt. Serve in a big bowl with toasted crusty bread or baguette.

Good recipe. I will half this next time, use canned beans, and cook on stovetop. Mine cooked for over 12 hours in the slow cooker and the bean are just barely soft enough.

I added at least 1-2 tbsp Adobe seasoning and garlic powder because I forgot to put in the garlic. Also added more mushrooms then called for. Yummy.

I made this yesterday and it came out great!  I followed the directions of 7 hours on low in the slow cooker and that did not cook the beans.  Once I put it to High for another 3 hours, the beans got soft.  I also added sliced green onion chicken sausage and chopped pork tasso for more flavor.  A very satisfying and hearty soup!

 I soaked my beans overnight, could I put my crock pot on high as to cut the hours of cooking the soup? I am just making the soup so rating will come later. Thank you.

This soup looked better than it tasted. I was really looking forward to this soup, but was very disappointed in the lack of flavor. I tried adding hot sauce to my bowl, but that did not work either. This might be better if you cooked in in a stock pot and cooked the vegetables caramelizing them. Also, maybe add some chicken browned in the pot as well.

Love this meal. Sorry Katie my family is not vagaries so I added beef to it and kept the spinach too. My kids wanted seconds, husband loved it and he’s very picky when I try to make new meals. FYI you don’t need to soak the beans over night. I stared the meal at noon and still made it the dinner table at 5.
