Lentil Stew

Ingredients

  1. 3 tablespoons oil or other fat
  2. 2 pounds ground meat or sausage, optional
  3. 1 cup diced onion, shallot or leek
  4. 3 large ribs celery, sliced thin
  5. 2 carrots, cut into disks
  6. 2 cloves garlic, minced
  7. 1 teaspoon your favorite ground spice
  8. 1 pound brown or green dried lentils, rinsed
  9. 1 teaspoon your favorite dried herb
  10. 2 potatoes, cut into large chunks
  11. Splash of vinegar, any type on hand
  12. Fried eggs, if you like, for topping

Instructions

  1. Heat a large pot over medium heat and add the oil. When hot, add the meat if using and brown for 3 to 5 minutes. Add the onions, celery, carrots, garlic and spice and cook, stirring occasionally, until starting to soften, 2 to 3 minutes.
  2. Add 6 cups water and scrape up any brown bits from the bottom of the pot. Add the lentils and herb and bring to a simmer. Add the potatoes and simmer until the lentils and vegetables are tender, about 45 minutes. Add a splash of vinegar to taste and serve the stew in bowls. A fried egg on top would be delightful.

I love this recipe! I have made it several times, with different spices, different meats and no meat. All was delicious. My favorite go to soup on chilly days .

I made it! My version was: For Meat/Hamburger and skin off crumbled linquica. For spices: Fennel seeds, cumin seeds (just a few) an 2 “LEGS” broken off of Star Anise and duPuy lentils.It needed “OMPH” so included tblspoons of BETTER THAN BULLION beef flavoring and a dash of soy sauce. (I add soy sauce to all my soups including chicken soup-my grandmother is rolling over in her grave. It adds a “lift” to the broth. Just a drop or two dependin on the amount you’re making. The biggest secret in cooking is to TASTE-correct-TASTE-correct, etc. Michael is the king.

Fantastic!  Quick, easy, great flavor, not picky on ingredients.  I used ground turkey, and half curry powder, half smoked paprika for the spice, with a mixture of basil, oregano and thyme for the herb.  I used sweet potatoes and they cooked faster than I expected, so next time I’ll simmer for 20 minutes, then add them and simmer till they’re done.  And yes, the fried egg is “Delightful”!!

Haven’t found a symon recipe that I didn’t like. Awesome flavor. Used curry and smoked paprika. Watched his video on social…very helpful. Used lamb and ground beef. Added sambal oelek for some extra kick. The fried egg on top is perfect.

Thank you, Michael. Lentil Stew is right up my alley! Low cost, and something to make with ingredients you can get during this Coronavirus outbreak. If you can’t find hamburg, Use mushrooms.
