Roasted Delicata Squash Rings

Ingredients

  1. 1 pound delicata squash
  2. cooking spray
  3. ½ teaspoon ground cumin
  4. ½ teaspoon ground coriander
  5. ¼ teaspoon ground black pepper
  6. ¼ teaspoon flaky sea salt
  7. fresh sage leaves

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Trim both ends from squash. Slice crosswise into 1/8-inch-thick rings, keeping seeds as intact as possible. Arrange rings (with seeds) in a single layer on the prepared baking sheet. Coat with cooking spray. Sprinkle with cumin, coriander, and black pepper.
  3. Roast in the preheated oven for 20 minutes. Flip rings; continue baking until tender and browned, about 20 minutes more. Sprinkle with flaky salt and garnish with sage leaves.

This is so simple to make, anyone could do it. I sliced the delicata squash into rounds, sprinkled it with the spices, as well as some extra cayenne, and baked it as described. It came out great! Unfortunately, the seeds in the squash were too hard for me to chew. The next time I make this, I’ll get a cookie cutter and remove the seeds before roasting.

I didn’t have the highest expectations for this dish, wow was I wrong! These are so yummy and easy to make! I loved how the seeds roasted with the squash and you could consume all of it. The squash was sweet but balanced with the seasonings. This is going on a repeat for me.

I don’t like squash much so this was my first time trying delicata squash. It was easy to prepare (especially not having to peel it!) and had a lightly sweet flavor that the savory spices complimented. Instead of spraying with cooking spray, I threw the slices into a ziplock bag with the spices and a bit of extra virgin olive oil. With this adjustment, it fits our Mediterranean diet well.

This squash is so good! It’s naturally sweet, and the savory spices really complement the sweetness. The seeds give a nice crunch to the tender flesh. If you prefer not to eat them, they disconnect more easily from the ring after baking as opposed to before.

I used cumin,salt & pepper, dipped in ranch dressing to serve,so delicious. Didn’t know I could eat the whole squash!
