Ingredients

  1. 1 small spaghetti squash cut in half, deseeded
  2. 2 tablespoons butter
  3. 1 tablespoon honey
  4. 1/2 tablespoon minced ginger
  5. Salt and black pepper to taste

Instructions

  1. Pre-heat oven to 375 degrees. Place squash on baking dish and add the butter, honey, ginger and seasoning. Bake for 45 to 60 minutes until squash is al dente. Do not overcook the squash. Spoon out squash and check for seasoning. Keep warm for serving.

This was a delicious alternative to the customary marinara sauce. It balanced the spicy chicken and greens served. I just added a touch of red chile pepper and some chopped chives for color.

I’ve always thought spaghetti squash was bland compared to other squash. However, I loved this recipe! I’ll definitely make it again. I would recommend being fairly generous with the salt and pepper, and I also added a few red pepper flakes because I like the flavor.

Fantastic, easy, great tasting recipe for spaghetti squash. Balanced flavors and low in carbs. To reduce cooking time, microwave whole squash for 20 minutes before halving and seeding. Add ingredients and finish baking for 10 minutes.

I made this using chopped ginger from a jar and cooked it covered with plastic wrap in the microwave. Very easy and delicious. When I have more time, I’ll roast in the oven. I will make this again. Tasted so fresh and healthy.

This is a very tasty dish. Once the squash has finished cooking, do not worry about the butter in the center. When you scrape/scoop the core out, it blends beautifully into the rest of the squash and adds an excellent flavoring.
