Ingredients
- 1 zucchini, cut into 1/4-inch slices
- 1 clove garlic, peeled
- 1 large egg, beaten
- 2 tablespoons all-purpose flour
- 2 tablespoons dry bread crumbs, or more as needed
- 2 tablespoons olive oil, or more as needed
Instructions
- Rub zucchini slices with garlic; set aside.
- Place beaten egg, flour, and bread crumbs separately into 3 small bowls.
- Turn zucchini slices in flour, dusting off excess. Dip in egg, then press in bread crumbs to coat.
- Heat olive oil in a large skillet over medium-high heat and pan-fry breaded zucchini in batches in hot oil until lightly browned on both sides, about 5 minutes.

This was not made with a beginner in mind. I experimented with frying on high, and then on a little less and the less worked better. I tried dredging in flour and then egg, but the flour repelled the egg, so I omitted the flour entirely. How did you get the flour to work in this recipe?
made it exactly to recipe but too bland for my taste. Zucchini doesn’t have much taste anyway, so it would have to be spiced up a lot more if I made it again.

Only thing i did differently was used parmesan flavored bread crumbs. Was easy and delicious
I have never fried zucchini before and this was delicious. I ate as much as I had left on the plate when I was done cooking. I seasoned with salt and pepper and these babies were yummy, crispy and perfect!
I will make it again but next time I will spice it up more. It was a little bland for me.
This turned out good but plan on more breadcrumb. 2 tablespoons isn’t nearly enough. I used Panko because they are my favorite. This was easy and one I will make again.
