Ingredients
- 2 tablespoons olive oil
- 1 pound fresh chorizo
- 4 Yukon Gold potatoes, cubed
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 pound kale, stems removed, leaves torn into 1-inch pieces
- 1/2 cup grated Parmesan
- Kosher salt and black pepper
Instructions
- Heat the olive oil in a large stockpot over medium heat. Brown the chorizo in the oil, 5 to 7 minutes. Add the potatoes, onions, garlic and chicken broth.
- Simmer until the potatoes are fork tender, 20 to 25 minutes. Reduce the heat to low, add the kale, and cover. Cook until the kale wilts, 7 to 10 minutes.
- Uncover, add the Parmesan, and heat through for about 5 more minutes. Season to taste with salt and pepper.

I love this soup. If you use Basque chorizo it comes in sausage casings like bratwurst. Sliced, it holds together better than the ground Mexican chorizo. The other addition I make is to add some corn, either fresh or frozen. It makes an everything meal.

This is an excellent recipe my family loved it I doubled it and put some in the freezer,I love to double my soups and sauces and freeze saves so much time during a busy work week.
This was a nice change from how I usually cook kale and it was a good soup for a chilly day. Great flavor and will definitely make again. I think I added a little more kale as I wanted to use all I had. Next time, I would probably add more meat. The chorizo really cooked into small pieces (more crumbly than ground beef). My husband is a carnivore and he wanted more meat in it.
This was a wonderful easy soup for our dinner tonight. Will definitely make again.

Quick, simple, and most importantly, flavorful. Could easily use hot sausage if you can’t find chorizo. I think it would taste pretty close to chorizo.
Making this recipe tonight though this is the umpteenth time. Used Lagoniza this time, increased to 24 oz and stripped casings off to allow crumbling. Trying purple kale and extra kale too . I stick to the ingredients and method. It’s delicious every time!!

I have never been a big kale fan but my wife grew a lot of it in her garden so I tried this recipe. OMG will I be making this again as I am an instant fan of kale! So much flavor from so few ingredients! My teen boys even love it and you know how hard it is to get teens to like veggies.
