Creamy Tortellini Soup

Ingredients

  1. 8 cups low-sodium vegetable or chicken broth
  2. One 1-pound bag frozen peas and carrots
  3. 10 ounces fresh cheese tortellini
  4. 1/2 cup heavy cream
  5. Kosher salt and freshly ground black pepper
  6. Shaved Parmesan and croutons, for topping
  7. Olive oil, for drizzling

Instructions

  1. Bring the broth to a gentle boil in a medium pot over medium-high heat.
  2. Add the frozen vegetables to the pot and return to a gentle boil. Add the tortellini and cook until almost tender, 3 to 5 minutes. Add the heavy cream and cook for another 2 minutes. Taste and adjust the seasoning.
  3. Ladle into bowls and top with the shaved Parmesan and croutons. Drizzle with olive oil.

This is the best creamy tortellini soup! One thing I tried was substituting one box of spicy vegetable broth for a box of vegetable broth or low sodium chicken broth. It added just the right amount of spice and was delicious. Lately I have not found the spicy broth so I tried adding 3/4 teaspoon of cayenne pepper. It was perfect! If you like a little spice to your soup I am sure you will love this addition. I make this all the time. It is one of our favorites. Thanks Ree for yet again an amazing recipe.

I thought perhaps I had read the recipe wrong when I made this soup, but I had not.  There was way too much broth for the amount of veggies and tortellini.  I won’t make it again.

This is wonderful as is!  I can’t believe how fast and easy it is to make.  The second time I made it, I added another 10 ounces of tortellini, and to thicken a bit, I whisked in a Tablespoon of flour into the cream before I added it.  This looks and tastes like it took a long time to make. This is a recipe I will make often.  The next time I make it, (which will be very soon), my husband suggested I use half cheese and half sausage tortellini.  We had leftovers, which were also delicious, as the tortellini expanded just slightly.  Don’t forget to top off the bowls with the croutons, cheese, and olive oil, as they really take it over the top!
