Avocado Soup

Ingredients

  1. 2 tablespoons canola oil
  2. 2 onions, chopped
  3. 3 cloves garlic, chopped
  4. 1 chipotle pepper in adobo chopped
  5. Salt to taste
  6. 4 ripe Haas avocados, peeled, cut into chunks
  7. 1 quart vegetable stock, plus more, if needed
  8. 1/2 cup sour cream, or yogurt
  9. 1/3 cup chopped cilantro
  10. 2 tablespoons freshly squeezed lime juice
  11. Thinly sliced scallions for garnish

Instructions

  1. Heat the oil in a large saucepan over medium high heat and add onions, garlic, chipotle pepper and saute until onions are translucent, about 5 minutes. Add salt, avocados and stock. Bring to a boil then reduce heat and simmer for 10 to 15 minutes or until avocados are soft. Add sour cream or yogurt and simmer 1 minute more. Remove from heat and puree in a blender or with an immersion blender. Add more stock if too thick. Stir in cilantro and lime juice. Ladle into bowls and top with scallions.

It sounds delicious but is it 2 small,medium or large onions?

Made this soup yesterday and it turned out very well! I only used one onion instead of two, a little extra chipotle pepper and a little less sour cream. Also, my boyfriend made a roasted corn and black bean salsa that I used as a garnish.

It makes a good amount, not too much where you end up throwing it away.

The preparation was easy and I had all of the ingredients on hand which is always nice. The texture was creamy and nice. I added extra adobe sauce from the chilies and a little red pepper to give it an underlining heat. It was yummy hot and I am going to try it cold for lunch today. Maybe serve in shot glasses with a little chopped shrimp and cilantro on top for an appetizer?
