Ingredients

  1. 2 (16 ounce) packages frozen corn kernels
  2. ½ cup butter, melted
  3. 1 (8 ounce) package cream cheese, softened
  4. 1 clove garlic, pressed
  5. 1 teaspoon white sugar
  6. salt to taste
  7. ½ teaspoon dried parsley

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook corn according to package directions. Drain water, then mix in butter, cream cheese, garlic, sugar, salt, and parsley. Spoon into a casserole dish and bake in preheated oven for 30 minutes, until lightly browned on top.

I’ve been making a variation of this for the last few years. I’ve done both stove top only and crock pot. I haven’t found a need to drain the water after cooking the corn as it all incorporates nicely. I love to step things up and add a small can of drained, chopped jalapeños and some crispy bacon. It’s so good that I’m asked to make it for every gathering! Thanks for the recipe and enjoy!

I love this recipe… I make it every Thanksgiving and Christmas, it’s so popular I have to double the recipie. The only change I make is, I use diced garlic and I add a can of diced green chilles! It’s amazing! This year I also substituted raw coconut sugar instead of white sugar.

Made this for a potluck, and nothing was left! I used canned corn, as the store was out of frozen. Just heated it till very hot ( do not boil) ,drain, put back into the warm pot, then fold in all the ingredients till well blended, place in casserole dish and bake! This dish is a mark up from serving just regular corn and goes great with any beef or even chicken or thanksgiving turkey! Yum! Yum!

Yum Yum Corn is a good name for this recipe because that is what my family said after their first taste. We were snowed in for about a week and eating what I had in my pantry. I needed to find a new way to serve corn. I had every thing on hand except parsley and frozen corn. I left the parsley out, and used 2 cans of drained whole kernel corn.. Delicious results! Yum!

I make a very similar recipe and add cooked, crumbled bacon and sliced green onions. It is so good and always draws lots of compliments and recipe requests!! But just the plain recipe is super good, too…..

I love this recipe, Its always a big hit at family get togethers. I use low fat cream cheese, garlic powder instead of raw garlic, leave out the sugar, and add in diced green chilles and a cup of shredded low fat cheese. Making again today for Easter! Yum Yum
