Ingredients
- ¼ cup tahini
- 2 tablespoons lemon juice, or more to taste
- ¼ teaspoon salt, or to taste
- 2 tablespoons warm water, or as needed
Instructions
- Mix tahini, lemon juice, and salt in a bowl until smooth and well incorporated. Stir in warm water, 1 tablespoon at a time, to achieve a drizzling consistency. Adjust dressing with more salt or lemon juice as desired.
- To make a creamier dressing, you can add 1 to 2 tablespoons of vegan plant-based yogurt.
- Using warm water instead of cold or room temperature water ensures the dressing is easier to stir and doesn’t solidify.

To the reviewer saying this dressing needs yogurt … it’s vegan, so it will taste differently from a dressing that uses traditional yogurt. Maybe a soy yogurt would add another tangy flavor to add to the lemon…. I loved this dressing as-is. Once I had added enough water to thin it out I needed to add a bit more lemon. Next time I’ll also use lemon zest, and probably paprika.
This was okay but it needed something. I don’t know what but it needed something for sure. I made a similar recipe from this site on the same night that called for Greek yogurt and it was definitely the better of the two. I recommend adding some of that and then maybe an herb of some sort. Again, it was okay but not great.
