Tofu and Broccoli Casserole

Similar to a chicken and broccoli casserole, except with tofu instead of chicken. It is quick, simple, and tasty!

Ingredients

  1. 1 (14 ounce) package tofu, frozen and thawed
  2. 2 (16 ounce) packages frozen chopped broccoli
  3. 1 tablespoon extra-virgin olive oil, or as needed
  4. 2 cloves garlic, diced
  5. 2 (10.5 ounce) cans condensed broccoli cheese soup
  6. ¾ cup milk
  7. 1 (12 ounce) package dry bread stuffing mix
  8. 1 cup shredded Cheddar cheese
  9. 1 dash chili powder, or to taste
  10. ground black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Slice tofu into 1/4-inch cubes.
  2. Place frozen broccoli in a microwave-safe bowl with a few tablespoons water. Cover and microwave on high power until tender, 3 to 4 minutes. Drain.
  3. Heat oil in a skillet over medium heat. Add garlic and cook until fragrant. Add tofu and fry for 3 to 5 minutes. Remove from the heat.
  4. Empty condensed soups into a bowl and stir in milk. Mix in dry stuffing mix. Add broccoli, fried tofu, Cheddar cheese, chili powder, and pepper; mix to combine. Dump into a 9×13-inch casserole dish.
  5. Cook in the preheated oven for 20 to 25 minutes. Let cool for 5 to 10 minutes before serving.

This was quite dry and just seemed like too much stuffing.

This recipe was really simple to make and pretty tasty. I used Mrs. Cubbison’s cornbread stuffing and skim milk. I followed the recipe almost exactly and it turned out great. The only thing I did differently was that I sprinkled the cheddar cheese on top of the casserole rather than mixing it in. Definitely comfort food…it tasted sort of like an enhanced stuffing more than anything, and was just what I wanted when I was feeling under the weather. When I make it again, I will probably experiment with adding different spices like cayenne or smoked paprika, but it is good as is.
