Smoked Asparagus

A fan of smoked food? Enjoy asparagus? This mild yet fragrant asparagus and garlic dish was created as a result of my experimentation while smoking a turkey breast. It was initially cooked in an iron pan on top of the smoker. You’ll adore this if you like asparagus! Everyone has so far found it enjoyable. I hope you agree.

Ingredients

  1. 2 tablespoons butter
  2. 4 cloves garlic, sliced thin
  3. 2 tablespoons lemon juice
  4. salt to taste
  5. ¼ teaspoon ground black pepper
  6. 1 onion, thinly sliced
  7. 1 ½ pounds asparagus, trimmed

Instructions

  1. Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C).
  2. Melt the butter in a small saucepan, stir in the garlic and cook over low heat until just tender. Remove from the heat and mix in the lemon juice, salt, and black pepper.
  3. Arrange the onions in the bottom of a large cast iron skillet or heat-resistant glass container. Spread asparagus spears over the onions. Drizzle the butter and garlic mixture over the asparagus. Place the uncovered skillet or baking dish on the top grate of the preheated smoker.
  4. Close the smoker and cook the asparagus until tender, about 1 hour.

An hour was the perfect amount to get a nice smoke in the asparagus and onions without overpowering. I do recommend using large asparagus as some of the smaller ones got overcooked.

I did not make any changes other than I didn’t have quite 1 1/2 pounds of asparagus. We used hickory chips. At one hour it was still very crisp. We gave it about 10 more minutes and it was perfect. The smoke was subtle and it was delicious. Will make it again anytime we are using the smoker. It is worth the hour.

Did not like this at all. Neither did my wife. We tossed the whole pan in the trash. Smoke overpowered all flavors. Oh well.

I love being able to cook an entire meal on the grill and smoker…this is a GReaT side dish that can be smoked while you are smoking your meats. I followed the directions exactly as written and it came out wonderful! This is a keeper!

I tried this and I have to say that it didn’t come out good at all. It was probably my fault in some way, for I haven’t smoked any vegetables before, only meat. I thought I followed everything to a T but the result was asparagus that not many people really wanted to eat. Sorry, as I said it was probably my fault.
