Sichuan Asparagus

This is the easiest side dish there is. Asparagus is quickly combined with heat and sweetness and placed on your table. If desired, garnish with finely chopped green onions and toasted sesame seeds.

Ingredients

  1. ½ pound fresh asparagus spears, trimmed and chopped
  2. ¼ cup soy sauce
  3. 2 tablespoons brown sugar
  4. 1 tablespoon cornstarch
  5. 1 tablespoon rice wine vinegar
  6. 1 tablespoon sambal oelek
  7. 1 tablespoon toasted sesame oil
  8. 1 teaspoon ginger paste
  9. 2 cloves garlic, minced

Instructions

  1. Bring a pot of water to a boil over high heat and cook asparagus for 1 minute. Drain and run under cold water to stop the cooking process.
  2. Whisk soy sauce, brown sugar, cornstarch, rice wine vinegar, sambal oelek, sesame oil, ginger paste, and garlic together for the sauce.
  3. Heat a skillet over medium-high heat. Cook sauce until thickened, about 3 minutes. Remove from heat and stir in asparagus.

Tasty sauce. I suggest to decrease the amount of cornstarch ,starting by 1 teaspoon and adjust as needed after as the sauce ended as a big clump in the pan. I may decrease the amount of Sambal Olek, it was good but the spiciness masked the taste of the asparagus. I did sautéed the asparagus for a few minutes instead of blanching them.

This is a wonderful dish if cooked with garlic cilantro from Aldi’s.
