Roasted Rainbow Vegetables in the Air Fryer

It’s really easy to make this sour cream-infused no-bake cheesecake. This dessert is easy to prepare when you need one right away. Everybody appears to enjoy it. It doesn’t matter if I serve the food simple or with toppings. At my house and church functions, this one is a hit.

Ingredients

  1. 1 red bell pepper, seeded and cut into 1-inch pieces
  2. 1 yellow summer squash, cut into 1-inch pieces
  3. 1 zucchini, cut into 1-inch pieces
  4. 4 ounces fresh mushrooms, cleaned and halved
  5. ½ sweet onion, cut into 1-inch wedges
  6. 1 tablespoon extra-virgin olive oil
  7. salt and pepper to taste

Instructions

  1. Preheat an air fryer according to manufacturer’s recommendations.
  2. Place red bell pepper, summer squash, zucchini, mushrooms, and onion in a large bow. Add olive oil, salt, and black pepper and toss to combine.
  3. Place vegetables in an even layer in the air fryer basket. Air-fry vegetables until roasted, about 20 minutes, stirring halfway through cooking time.

Added chicken breast I cooked separately and had a vegetable chicken salad. It was yummy!
