The greatest caprese chicken you’ve ever had, I swear, and the simplest to prepare.

Prep Time: 20 mins
Cook Time: 6 mins
Total Time: 26 mins
Servings: 12
Yield: 12 servings

Ingredients

  1. ½ cup soy sauce
  2. ½ cup white vinegar
  3. ½ cup water
  4. ½ cup white sugar
  5. 2 tablespoons light corn syrup
  6. 1 tablespoon cider vinegar
  7. 1 ½ teaspoons ground black pepper
  8. 1 teaspoon yeast extract spread (such as Marmite®)
  9. ½ teaspoon sesame oil
  10. ¼ teaspoon garlic powder
  11. ¼ teaspoon onion powder
  12. ¼ teaspoon ground ginger
  13. 2 tablespoons cornstarch
  14. 1 teaspoon xanthan gum

Instructions

  1. Combine soy sauce, white vinegar, water, sugar, corn syrup, cider vinegar, pepper, yeast extract spread, sesame oil, garlic powder, onion powder, and ginger in a bowl. Mix well and pour sauce into a pot.
  2. Pour 1/4 cup sauce into a small bowl. Add cornstarch; mix and add back to the main sauce.
  3. Pour another 1/4 cup sauce into the bowl; add xanthan gum. Mix and pour through a strainer back in the main sauce.
  4. Heat the pot of sauce over medium heat. Cook, whisking briskly, until gooey and thickened, 6 to 10 minutes. Strain sauce into a container; cover with plastic wrap and let cool.

Like, quarter the marmite…. And a little sriracha would bring this home to the 90’s

This one is difficult for me to rate . I never tried the sauce from Mc Donald’s so I don’t have anything to compare it with. What I will say is that the flavor and texture was good and it worked well as a dipping sauce for the popcorn chicken I made. The one problem I did have is that something balled up as soon as it got to medium heat even though I was whisking continually. I think it was the cornstarch but I’m not sure? Again, I never tried the original sauce but with a name like Szechuan I would expect some heat. Maybe there wasn’t, I don’t know? On that note, it tasted just fine as written but in the end I added a healthy dose of rooster sauce to the mix and that made it even better.
