Really Simple Rice

These chicken wings made in the Asian way are incredibly tasty, spicy, sweet, salty, and sticky. These wings fly off the platter thanks to the hoisin and teriyaki sauces with ginger and garlic flavoring, brown sugar, and hot garlic chili sauce! For watching the big game, they are excellent as an appetizer or light supper. They taste great accompanied with more sauce for dipping or with an Asian slaw.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 cup long-grain white rice
  3. ½ small onion, minced
  4. 2 cups low-sodium chicken broth
  5. 1 pinch garlic salt, or to taste

Instructions

  1. Heat oil in a nonstick saucepan over medium-high heat until almost smoking. Add rice; cook and stir quickly to toast, 2 to 3 minutes. Add onions and sauté for 1 minute.
  2. Stir in broth and garlic salt; bring to a boil. Reduce the heat to low, cover, and cook until liquid is absorbed and rice is tender, about 20 minutes. Remove from the heat and allow to rest for 5 minutes. Uncover and fluff with a fork.

Love this!!! We didn’t want just plain white rice. I didn’t use the olive oil, but a little real butter. And heavy on the garlic. Definitely a go to, to change things up.

It’s a great everyday staple. My daughter thinks ‘m a chef now. My only issue now is generating enough chicken stock to fuel the rice. I try and pick up a Rotisserie Chicken every couple of weeks for a meal, and to make chicken stock from the leftovers. The one’s from Sam’s Club are the biggest and best for the money.

Ive tried several recipes for rice and hadn’t found one I liked until I tried this one! It’s delicious and so simple! My husband and I love rice and I’m always looking for ways to spice up a common dish. We LOVED this!! He gulped it down and asked for seconds. I replaced the chicken broth with Swanson veggie broth and it was super tasty. I will DEFINITELY be making this again!
