Ingredients

  1. 3 tablespoons butter
  2. 1 cup chopped onions
  3. 1 cup chopped green bell pepper
  4. ½ cup chopped celery
  5. 1 clove garlic, minced
  6. 1 (28 ounce) can diced tomatoes with juice
  7. 2 teaspoons chili powder
  8. 2 teaspoons beef bouillon granules
  9. ½ teaspoon salt
  10. 3 cups cooked white rice (such as Uncle Ben’s®)

Instructions

  1. Heat butter in a frying pan over medium heat; cook and stir onion, green bell pepper, celery, and garlic until slightly tender, 5 to 10 minutes. Stir tomatoes with juice, chili powder, beef bouillon granules, and salt into onion mixture; add rice. Simmer rice mixture, stirring occasionally, until heated through and flavors are blended, 15 to 20 minutes.
  2. You could use leftover or already-prepared rice. When you add the rice to the frying pan make sure to heat it through. Cooking time varies depending on whether you’re using precooked rice.

I made this as written but I used red yellow and orange peppers. I did not pre cook my rice but I sautéed it a bit in the butter than added my canned tomatoes and 1/2 can of water. I used 1 1/2 cup of uncooked rice. I then simmered as directed. This way you do not get overcooked rice. It was very delicious and everyone loved it. Next time I think I would add a little more spice but keep everything else the same. Thank you for the great recipe!

I’ve tried several Spanish rice recipes, but I didn’t like any of them. Until this one. This recipe is delicious. I used only 1tsp of chili powder because one family member doesn’t like spicy food. This recipe made enough for 4 meals as a side and two mixed with cheese and beans to make tortillas. I will definitely make this dish again.

Great recipe! I did make my own modifications. I didn’t have celery, so I omitted it. Omitted the bouillon cube since I didn’t have that, either. I didn’t miss either of them. I also omitted the butter. Instead, I pan fried 3 slices of bacon. After mopping up all but about a Tbsp of the drippings I added 1 Tbsp of garlic infused olive oil to the frying pan to saute the onions and green pepper. I chopped & added the bacon the rice and tomatoes before simmering . I did the entire dish, start to finish, in the same electric frying pan. It was a hit!

I did not have celery so I omitted. I also used left over white rice from Chinese take out last week, and instead of canned tomatoes, I used three 10 oz cans of Rotel with chilis. This came out near perfect. It is a keeper! The only thing I may do differently next time is perhaps lessen the amount of chili powder. It had a bit of a kick to it due to amount of chilis I already added, but it was a total hit with the less tender-tongued in my house lol

Bad recipe. Tastes like canned tomatoes… I added taco seasoning in to try to save the fish helped a little but not much.

Very nice baseline. I used EVOO instead of butter. 3 Tbls of premium chili powder and tomato sauce instead of tomatoes. We like heat so also added some red pepper flakes and hot sauce. Very good and I’m sure it will be even better tomorrow.

This was really good. I used olive oil instead of the butter, also brown rice, and chicken bouillon to go with a chicken dinner. I remember using bacon in an old Spanish Rice recipe, so next time I think I will use bacon grease instead of olive oil or butter for a little extra flavor. I will definitely use this recipe again.

I was out of canned tomatoes and substituted salsa. I also omitted the salt & added a can of black beans. It turned out delicious! This was a side to fish tacos & the whole family Loved it. It’s a keeper in my recipe book. I highly recommend this one.

Thanks for posting this recipe, since it seems that most folks have forgotten all about this delicious old side dish which our moms made ‘back in the day’. The only thing that I did differently was to use brown rice instead of white, because that’s what I always use. We all loved it, so I’ll definitely be making it more often. Thank you for reminding us about this easy & delicious side dish.

I omitted the celery (for some reason, I didn’t have any on hand this week and didn’t want to spend extra money at the store), increased the garlic and went a little easy with the chili powder. I used pre-cooked brown rice. Heating this through for 20 minutes was unnecessary. I think if I had done that, my rice would have been WAY overcooked. Tasty, though a little salty for our tastes. The kids especially liked this. NO leftovers.

Had to make one substitution, otherwise, followed the recipe. I found out I didn’t have any bell peppers, so I ended up adding some sliced olives, and they worked well. This is moist, quick-to-make, and a delicious version of Spanish rice. Thumbs up in this house!
