Lemon and Tahini Dressing

It’s wonderful to switch up from sweet salad dressings with this acidic, rich dressing. Serve this dish as a dip with diced fresh veggies for a more relaxed supper.

Ingredients

  1. 4 tablespoons tahini
  2. 2 tablespoons extra-virgin olive oil
  3. 2 tablespoons water, or as needed
  4. 1 lemon, juiced
  5. 1 teaspoon lemon zest
  6. ½ teaspoon granulated garlic
  7. ½ teaspoon pink salt
  8. ¼ teaspoon freshly ground black pepper

Instructions

  1. Combine tahini, olive oil, water, lemon juice, lemon zest, garlic, pink salt, and pepper in a 2-cup measuring cup. Stir briskly with a whisk until all ingredients are well blended. If a thinner dressing is desired, add water, 1 teaspoon at a time, stirring after each addition, until the desired consistency is achieved.
  2. Store unused dressing in a sealed container in the refrigerator, up to 4 days.
