Ingredients

  1. ¼ cup mayonnaise
  2. ¼ cup extra-virgin olive oil
  3. 2 tablespoons medium-chain triglyceride (MCT) oil
  4. 2 tablespoons lemon juice
  5. 1 tablespoon Dijon mustard
  6. 2 cloves garlic, peeled and crushed
  7. 1 pinch Himalayan pink salt
  8. ground black pepper to taste
  9. 2 tablespoons chopped fresh parsley

Instructions

  1. Combine mayonnaise, olive oil, MCT oil, lemon juice, Dijon mustard, and garlic in a jar. Season with salt and pepper. Add chopped parsley; close the jar tightly with a lid and shake until well mixed.
  2. You can substitute parsley with other fresh herbs, such as oregano, basil, and chives.
  3. You can make your own mayonnaise and Dijon mustard if you like.

This turned out well enough. I didn’t have MCT so just used EVOO. Added grated parm to some leftover dressing for more of a Caesar thing and it was good too. Thinking next time, try to blend in avo puree. Thank you for sharing!

This was really good. I usually don’t like honey mustard dressing, but this was pretty yummy. My daughter that likes honey mustard tasted it, said it was really tasty, and asked if I had any left.

This turned out great and I just realized that I totally spaced the parsley which would have made it even better. After tasting it I thought it could use more pepper (the parsley I overlooked would have solved that) and I added some crushed pink peppercorn. So with that being said, this would be perfect as written!
