Ingredients

  1. 2 tablespoons butter
  2. 3 tablespoons cider vinegar
  3. ¼ cup brown sugar
  4. ½ teaspoon salt, or to taste
  5. ¼ cup onion, minced
  6. ½ cup grated peeled apple
  7. 2 pounds red cabbage, thinly sliced
  8. ⅛ teaspoon ground cloves
  9. ⅛ teaspoon ground allspice

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter. Add apple cider vinegar, brown sugar, and salt. Stir to combine. Mix in onion, grated apple, and red cabbage until well combined. Close and lock the lid. Select Steam function. Set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Mix in ground cloves and allspice.

Made it to go with chicken apple sausages and my Mom’s potato salad and it was terrific and fast, and the best part of it was no cabbage smell in the kitchen!!! The spice combo is perfect and it’s not too sweet. 9/17/21

I don’t have an Instapot, so I used a large pot on the stove with a lid. I doubled the apple cider vinegar, brown sugar and apple and eliminated the other spices for a milder, sweet flavor. Added sliced up Beyond Meat sausages about half way through cooking. It was a delicious entree, served with baked sweet potatoes.

This is one of my favorite dishes. We serve it with pork or ham. I always add raisins. It makes it a little sweet and compliments the cider vinegar.

Made this and will definitely make again …… My changes … Only used 1 pound of purple cabbage but left remainder of recipe, as written (sauce ingredients), in the same amounts. Personally, if I were to use the 2 pounds of cabbage called for I would double the remaining ingredients or at least use 1.5 as much. Sautéed 3 slices of bacon and left butter out …. Once bacon was nicely cooked, turned sauté feature off, added all remaining ingredients (except cloves and allspice) and stirred well to make sure there were no bacon bits stuck to the bottom of the SS pot liner. Put lid on, set to STEAM for 3 minutes, let NPR until pressure valve dropped, removed lid and added cloves and allspice.

Very easy to make. Taste was good, but it would have been better served with sausage because the extra strong flavors of sausage would be a batter balance for the sweetness of the cabbage. (I made hamburgers.) I appreciated the note about how long to expect the Instant Pot to heat up before the countdown in steam function. That was very useful in planning dinner.

The was very good. I would definitely make it again. I did not have time to take a picture as everyone was ready to eat. I served it with home fried potatoes and pork schnitzel. German red cabbage was a perfect side dish.
