Instant Pot Cheesy Broccoli Rice

A traditional south Indian meal called sundal, which originates from Tamil Nadu, is made as naivedyam (Prasad) for poojas. Sundal is both delicious and incredibly nourishing. I could eat an entire bowl of it. Sundal is made with a variety of legumes. The white chickpea variation is my favorite.

Ingredients

  1. 1 tablespoon butter
  2. ¼ cup chopped onion
  3. 1 ½ cups chicken broth, divided
  4. 1 cup uncooked white rice
  5. 1 head broccoli, chopped
  6. ½ cup fat-free half-and-half
  7. 1 teaspoon garlic salt
  8. ½ teaspoon Italian seasoning
  9. ¼ teaspoon black pepper
  10. 1 cup shredded Cheddar cheese, divided

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select the Sauté function. Add butter and stir until melted. Add onion and sauté until golden brown, about 5 minutes. Stir in 1 1/4 cups chicken broth and rice; liquid should cover rice. Close and lock the lid. Select Rice setting according to manufacturer’s instructions; set timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Stir in chopped broccoli and add remaining 1/4 cup chicken broth if rice looks dry. Close the lid and seal the vent. Select Steam and set the timer for 5 minutes.
  3. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Add half-and-half, garlic salt, Italian seasoning, and pepper; stir in 3/4 cup Cheddar cheese until combined.
  4. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler. Grease an 8-inch square casserole dish.
  5. Transfer broccoli mixture to the prepared casserole dish and top with remaining 1/4 cup Cheddar cheese. Broil until cheese is golden brown, about 5 minutes.

Flavor was good but directions once you add the broccoli don’t work. You would have to add a lot more liquid to keep the bottom from burning. My rice was perfect then I added a bit more chicken broth and the broccoli and turned it to steam then got the burn warning. Not sure if it would all turn to mush if you added a lot more broth with the broccoli.

I liked that this recipe used fresh broccoli, regular rice and real cheese. I do think it needs a bit more liquid whether it be the half-n-half or chicken broth. I got a couple of different error codes during different steps of the recipe that led me to believe it needed more liquid. I will probably try this again.

I don’t know if I didn’t add enough liquid but after I added the broccoli and let it steam for 5 mins, it was stuck to the bottom.. I would probably add more liquid next time. Overall it was ok. It’s not something I wont try again
