Fried Potatoes with Bacon and Ramps

This meal is perfect for spring since it combines ramps with pan-fried potatoes and crispy bacon. You are missing out if you don’t have a ramp. They are a member of the leek family and have a flavor similar to that of garlic, onion, and something more.

Ingredients

  1. 5 large potatoes, peeled and sliced
  2. 2 tablespoons bacon drippings
  3. 6 ramps, thinly sliced
  4. 5 slices cooked bacon, chopped
  5. salt and ground black pepper to taste

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until potatoes start to soften, about 10 minutes; drain.
  2. Heat bacon drippings in a large skillet over medium-high heat; cook and stir potatoes in hot drippings until golden brown, about 15 minutes. Stir in ramps and bacon; season with salt and black pepper. Continue cooking, stirring occasionally, until ramps are soft, about 5 minutes.

5 large potatoes is way too many! 5 medium or small makes more sense relative to the amount of bacon and Ramps. Also I think scallions or actual leeks chopped small ( or a combination thereof) would work just fine. I would not be shy with the pepper – might use red pepper or jalapeno flakes next time. To me this is a good base but needs adjustment to become great.

I’ve made this recipe every other day for a couple weeks now, that’s how much I crave it. I go into the woods and dig them out fresh. Only change I made was to add chopped up ramp leaves in the end and let them wilt a bit just like spinach. So delicious! This dish has made alot of converts in my family, young and old!

5 large potatoes was way too much for this recipe. I also over-cooked mine but that was my fault, not the recipe! What I ended up with was the consistency of a baked potato, but we were ok with that and not bad for a first try! We have wild onion growing in our backyard and my 12 year old wanted to try cooking with them, and this recipe was perfect for that.

I was afraid simmering my sliced potatoes would turn them to mush by the time the dish was complete. I rinsed my sliced potatoes and patted dry, placed them in a single layer on a plate and microwaved them for a minute or so and then proceeded with the recipe. If you’re able to find ramps (wild leeks) I encourage you to try this. If you like onions and garlic you’ll like ramps. They taste like a cross between the two.
