Fonio with Black Sesame Seeds

As a side dish or a couscous alternative, fonio is cooked with toasted black sesame seeds. A Senegalese grocery store employee gave me this recipe after I complained about the millet couscous and the pricey quinoa. This little grain from Africa is loaded with nutrients and health advantages and is really simple to prepare. Fonio can be made in a variety of ways, but for taste and easiness, I like to use this method.

Ingredients

  1. ¼ teaspoon vegetable oil
  2. 2 tablespoons black sesame seeds
  3. 1 ½ cups water
  4. ½ cup fonio
  5. ⅛ teaspoon salt

Instructions

  1. Heat oil in a small skillet. Add sesame seeds; toast until fragrant, about 6 minutes.
  2. Bring water to a boil in a saucepan. Stir in toasted sesame seeds, fonio, and salt. Bring water back to a boil. Reduce heat; simmer, covered, until water has been absorbed, about 5 minutes. Fluff fonio with a fork.
