Ingredients
- ¼ pound butter, melted
- 1 (15 ounce) can whole kernel corn
- 1 (15 ounce) can creamed corn
- 1 (8.5 ounce) package corn bread mix
- 1 ounce sour cream
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine butter, whole corn, creamed corn, cornbread mix, and sour cream in a mixing bowl.
- Fold the ingredients together, and pour into a 2-quart casserole dish.
- Bake in the preheated oven for 1 hour.

I didn’t have any cornbread mix, so I looked up the alternative from scratch and added a few more ingredients: I did 2/3 cup flour, 1/2 cup cornmeal, 1 TBS baking powder, 1/2 TSP Salt. Combined the dry ingredients in a bowl. Mixed together wet ingredients (1 cup sour creme, 2 eggs, 1/2 cup melted butter, 3 TBS brown sugar, 1 can cream corn, 1 can corn drained). Added wet to dry ingredients, baked 375 for 45 minutes or so and it came out great!
My teenage son said that I should make this all the time. I followed the tweak someone suggested by preheating my cast iron skillet before pouring the batter in, but I made sure to slather it liberally with bacon grease. Yum! Next time I’m going to use the sharpest cheese I can find. Quick and easy!

I made this using a gluten free cornbread mix and doubled the recipe due to the mix size. My family loves cornbread casserole and this recipe was a winner made as written. It is buttery but we liked that. I would make again, possible using this recipe over our usual recipe.

This is just like my favorite, except mine calls for 1 cup of sour cream and 1/2 cup of melted butter, and uses Jiffy Corn Muffin mix as others have said. Delicious!!
Got this recipe from a coworker at a Holiday potluck. 5 min prep, a kids favorite! Slide it into the oven an hour before kids get home from school. Tasted great even when I skipped sour cream. Perfect for everyday dinner as a side or for a holiday meal!
