Every time I prepare this simple dish, I enjoy it. good whether it’s hot or cold!

Ingredients

  1. 1 (15 ounce) can cream-style corn
  2. 1 (11 ounce) can whole niblet style corn
  3. 2 eggs
  4. 1 cup sour cream
  5. 1 (8.5 ounce) package dry corn bread mix
  6. ½ cup butter, melted
  7. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 8 x12 inch casserole dish.
  2. In a mixing bowl, combine cream corn, niblet corn, eggs, sour cream, muffin mix, and butter. Pour into prepared casserole dish.
  3. Bake in a preheated oven for 30 minutes or until lightly brown.
  4. Remove from the oven and sprinkle cheese over the top. Return to the oven for 15 minutes or until the center is firm.

It was delicious! I made it for 16 servings for 6 people. I used Monterey Jack, Sharp Cheddar and Provolone cheese. It was practically finished the same day. Everyone loved it, and I’m glad that I increased the recipe. I’m looking forward to making this dish again. Thank you!

I used a little garlic powder and onion powder, and forgot the cheese because I was distracted, and it is great!! So it’s even cheaper without cheese LOL.

I change the recipe a bit; I didn’t have enough sour cream so I used Brown Cow brand’s Maple Yogurt instead. Then guess what! It was a great surprise! The aroma of maple syrup from yogurt and cornbread was so tempting I kept checking my oven … which lead to my fall of final product to be a bit of visual failure! Yikes! It looked very picturesque when it first came out of the oven – full bodied casserole. As you can see, the center is bit carved in. It sank as it cooled off. I think it’s because I kept opening the oven because I was emotionally weak to fight off such a wonderful smell in my kitchen. So don’t do what I did, cheers! It was big hit at my social distancing 6’ apart dinner.

we made this recipe as a Thanksgiving side and it was unbelievable! it was so good people came back for seconds and even thirds (I tripled the recipe) and a few people ate some warmed over in the microwave with a dab of fresh whipped cream as a dessert!! it goes with any type of dinner and is well worth the less than 10 minutes it takes to throw it together.

This is a great and simple recipe. I left out the cheese and doubled the recipe. Cooked at 375 for 1.5 hours in 9×13 pan. Came out perfect for Thanksgiving dinner.

This dish is absolutely awesome. My company always wants me to bring for company dinners. Only change is I use Jiffy cornbread mix. it makes it just sweet enough to give it the extra flavor it needs. Note: drain the whole corn or it will be to juicy
