For a wonderful, cheesy vegetable side dish, make this zucchini casserole, which is incredibly simple to make.

Ingredients

  1. 4 slices bread, cubed
  2. ¼ cup melted butter
  3. 2 cups cubed zucchini
  4. 1 large onion, finely chopped
  5. 1 large egg, beaten
  6. 1 teaspoon garlic salt
  7. 2 cups shredded Cheddar cheese

Instructions

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

  3. Place bread cubes in a medium bowl and pour melted butter over top. Add zucchini, onion, egg, and garlic salt; mix well.

  5. Transfer the mixture into a 9×13-inch baking dish and top with cheese.

  7. Cover and bake in the preheated oven for 30 minutes. Uncover the dish and bake for another 30 minutes.

The first time I made this exactly as directed but unknowingly baked it for 30 minutes. Turned out perfect and was delicious! When I realized my mistake the second and third times I made it, I baked it as directed for a total of 1 hour — too crunchy. Will go back to 30 minutes.

This was a very easy dinner recipe to make and baked it for about an hour. I did make changes : added more garlic, and herbs, 6 eggs in all- so more of a bread pudding texture . Also increased the amount of milk and added about 1 C of heavy cream- but no butter. I had some sausage that needed cooking so that went in too! Came out delicious! They loved it with a simple salad including orange slices and radishes.

My husband and I liked it. Yes I will be making it again and again. I toasted the bread and I mixed in the cheese with all other ingredients. Used less onion and did sauteed it first.

I have made this 4 times now and love it. One thing I like is it’s so easy to change it up. 1st time I made it as written. Great flavor but we didn’t like all the cheese on top which got kind of hard. 2nd time I took a tip from another reviewer and mix in shedded mexican cheese and some mozzarella . That’s the way to go. Last night I added some cherry tomatoes, green pepper and and 2 eggs instead of 1. I will contenue to to play with this recipe. I have so many garden Zucchinis I’ve got to do something. ;-))

I put half the cheese in the mixture, put it in a 7×11 glass baking dish and cooked it a little longer. It came out great!

This was amazing. I did tweak it and listened to other comments. I sautéed the half a white onion and 3 large chopped fresh garlic in the butter. I put a bit of salt over the cubes zucchini to rid some water and set aside. Had some bigger Tyson popcorn chicken and cut in smaller pieces and added that to the mix. Used a 7×11 casserole dish. I also covered the bottom of the casserole dish with ranch flavored croutons. Followed rest of recipe and myself and husband loved it.

Prepared this recipe as written with exception of toasting bread first and adding a little more than 2 cups of zucchini. Dish tasted very eggy. Sad to say that none of the 7 of us who tried it liked it, which is very unusual for my family.

I sautéed the onion in the butter with the garlic salt. I used 1/2 the onion. I used an 11 x 7 baking dish. I used up all the little bits of shredded cheese I had, including sharp cheddar, Mexican blend and even a little bit of Italian. This was sooo good.

This was very good, I made it exactly according to directions. In my opinion the onion was very overwhelming so next time, the only thing I’ll change, is to cut the onion amount in half!

When I think of cheesy casseroles, I think of creamy, melted cheese. This was not creamy. It was crunchy and bland, like thanksgiving stuffing without the fruit, nuts, or flavor. Not again.

We liked this dish quite a lot. I made it as a full meal, adding some left over ground beef & onions, decreasing the raw onions to compensate. For the bread, I used up 4 bread crusts, letting them dry a bit before making the recipe. I also added some pepper. The recipe doesn’t say to grease the pan but I buttered it anyways, using a 7.5″ x 12″ glass pan. It turned out quite good but next time, I will increase the zucchini to 3 cups & leave the cover on another 10-15 minutes as the cheese was overdone [my reason for the 4 instead of 5].

This was good! I used an 8×11 casserole dish which worked out perfectly. (I think an 8×13 would make the casserole to thin.) I used cubed sourdough bread. I think this recipe is good as is but I also think you can play with it and customize it to your preference. I think you could add herbs to warm it up and make it taste more like stuffing or use some cayenne or hot sauce if you like things more spicy. Or, just have it like it is. It would be a nice side dish with ham!

We really liked this casserole. Next time, I plan to toast the bread, half the onion amount, double the zucchini amount and maybe add mushrooms. That’s just a personal preference.

This very simple casserole was excellent! The zucchini I had was enough for half the recipe and it was perfect. I might use a tad less butter next time because the cheese has enough fat in it.

Good side dish, easy to prepare early in the day & cook later. Can be a complete meal just add some protein. I read other reviews & toasted bread 1st, used mixture of cheese that I had & mixed in, not on top, only 1/2 onion, added salt/pepper & garlic powder. will make this again as it is easy to change up.
