Cheesy Broccoli Quinoa

Ingredients

  1. 2 cups chopped broccoli
  2. 1 ¾ cups vegetable broth
  3. 1 cup quinoa
  4. 1 cup shredded Cheddar cheese
  5. salt and ground black pepper to taste

Instructions

  1. Combine broccoli, broth, and quinoa in a saucepan; bring to a boil. Reduce heat to medium-low, place a cover on the saucepan, and cook at a simmer until the broth has been absorbed and the quinoa is tender, 15 to 20 minutes.
  2. Stir Cheddar cheese into the quinoa, replace the lid, and set aside until the cheese melts, 2 to 3 minutes; season with salt and pepper.

I liked it. Very easy to make but be very very easy on the heat level. You can really dry up the grain and it gets clumpy. Maybe just a half cup of cheese too.

I put the salt & pepper in at the beginning. Added 2 crushed garlic cloves (for 4 svgs). Unlike other reviews, my broccoli did not get mushy. I do recommend putting the broccoli on top of the quinoa, not stirring, so all the quinoa is submerged. Definitely a keeper recipe!

I sautéed onion to add flavour before adding the broth, quinoa and fresh broccoli. I foliowed the recipe exactly, otherwise, (15 minutes on the quinoa cook, but using hot broth) and it tasted good…. But the broccoli was mush! Next time I’ll do it as suggested by another reviewer, adding the broccoli only for the last 7 minutes.

I can’t really rate this properly because I changed it up a lot to make a full meal out of it but my family loved it. I sautéed finely chopped onions and shredded carrots with the quinoa before adding the broth. I also added garlic and onion powder, Italian seasoning, kosher salt, and black pepper. I had left over broccoli that was already cooked so after the quinoa had simmered for 15 minutes I added the broccoli and also added shredded chicken and a little more broth and let it simmer for 5 more minutes. Then I topped it with graded parmesan and cheddar cheese.

5 stars for ease of prep and healthful. Flavor is slightly bland for me but will make again with some amped up spices. I did add garlic and onion and cayenne as some reviewers recommended.

I didn’t have vegetable broth, substituted it with with the broth/water from braised spinach I had frozen from a few days ago. Added a dash of my favorite mixed herbs and a few sprigs of lemon thyme to taste. Works great!

I made this again because it lacked flavor. Please make sure to clean, rinse, drain and toast quinoa BEFORE starting. It makes a heck of the difference in the taste! After toasting I removed from the skillet added a little olive oil then some type of aromatics like onions, garlic and or shallots (I read the reviews and they were spot on). Knocks the dish up soooo many notches! I also added a pinch of red pepper flakes, garlic & onion powders to the dish. It was really a home run AFTER this! Thank you for laying the blueprint for me to run off with this amazing recipe! My new fav!

made this as written except used chicken broth as I didn’t have veggie broth. used fresh broccoli. it was pretty good, was doing a trial run before making it for a relative who doesn’t eat meat. will make again for her with the veggie broth. think I might add some spice next time as well, garlic/herbs.

I added onion and used chicken broth. I also used a can of shredded chicken. It was very good once I added some more spices such as garlic powder, more pepper and more salt (I didn’t salt it much at first because of use of the canned chicken and broth as I didn’t want it too salty).

Tasty, and a good side dish! In place of the quinoa, I used a Seeds of Change mix (quinoa, brown and red rice). First I simmered the chopped broccoli in a skillet with a half cup of chicken broth until the liquid cooked away, then added another quarter cup of broth along with the quinoa mix, heated through for about 2 minutes, then added the cheese and covered until it melted.

I sautéed some onions, garlic, celery, shredded carrots, etc., with the broccoli, whatever you like first, then added the quinoa and broth when it was half -cooked. Added the cheese at the end, then some on top when it was in the serving bowl. Loved it and so did my company!

What a tasty simple recipe! I doubled the broccoli (4 cups) and used 3 cups of water + 1 veggie bouillon cube. It wasn’t too much broccoli for me – flavor & texture was great! Also I used Daiya vegan cheddar cheese instead – about 1/2 cup. Tastes awesome and super healthy!
